2 ripe bananas
2 ripe apples
2 tablespoons sliced blanched almonds
1 tablespoon raisins (or more, to taste)
2 cups organic plain oats
Cinnamon (optional)
Preheat the oven to 375°F (190°C).
Blend the fruits:
In a blender or food processor, puree the bananas and apples until smooth.
Add the dry ingredients:
Transfer the fruit purée to a bowl. Add the almonds, raisins, and then the oats.
Mix well until the mixture is evenly combined.
Adjust the texture:
The mixture should be thick enough to form patties.
If it’s too runny, add 1 to 2 tablespoons of oats at a time until the consistency is right.
Form the cookies:
Scoop portions of the mixture onto a baking sheet lined with parchment paper, shaping them into patties.
Bake:
Bake for 35 minutes, or until the patties are golden brown.
If needed, bake for an additional 5 minutes for extra browning.
Let cool slightly before serving.
